this dessert could kill you

The Australia day dinner party was only a slight disaster - but after a private laundry room meeting, some tears, and forgiving Hammy - we redeemed ourselves in the end - and by 11pm (or Tash's fourth dark & stormy - whichever came first), everything was perfect:

Lessons Learned:

1. See above photo: Shlee holding a batch of her famous Killingtons (aka - poisonous lamingtons) - after cooking the frosting, we assembled the lamingtons - and only 2-hours later while cleaning up did we realized while cooking the frosting on the stovetop, we scrapped about 1/4 of the non-stick surface off the pot.

2. Bubble and squeak is much harder to make than you think - it's not the Aussie Lattke as previously thought.

3. It's important to check on lamb while you are cooking it in a french oven - 180 degrees is not medium rare.

4. When you ask people to bring an appetizer - don't let them make it at your house - especially if it involves raw pork and seafood and frying it on your stove - at least the fire alarm stopped going off right before everyone walked through the door.

5. Dark rum + Waltzing Matilda + 80's Trivial Pursuit = super fun dinner party!

Happy Australia Day!!!!
(or as we like to call it: Paul & Tash appreciation day)
